This cake is Delicious and great this time of year when you want the taste of Pumpkin Pies but not ready for Thanksgiving yet<br />
<br />
Cake:<br />
Dry ingrediets, mix together and set aside<br />
3 cups organic Spelt Flour<br />
1 1/2 tsp baking soda<br />
1/2 tsp salt<br />
1/2 tsp baking soda<br />
2 tsp cinnamon<br />
1/2 tsp allspice<br />
1/2 tsp ginger powder<br />
1/2 tsp nutmeg<br />
<br />
Wet ingredients, mix together and add to dry 1/3 at a time<br />
3 eggs *Look below for vegan instructions<br />
1 1/2 cups organic sugar<br />
1 1/2 cups soy milk or milk<br />
2 Tb mollasess<br />
3/4 cup canned pumpkin<br />
1 Tb vanilla<br />

Once you have mixed the two batches together pour into a greased 13x9" pan. Bake at 350' for 25-30 min or until a toothpick stuck into the center comes out clean. Allow to cool then frost with ginger frosting.<br />
*If you want this to be vegan substitute the eggs for 1 1/2 Tb egg replacer whipped with 6 Tb water and 1/4 tsp citric acid along with the baking soda and salt mentioned in the dry ingredient list.fold this into the wet ingredients then proceed with remainder of recipe.<br />
<br />
Frosting:<br />
1 1/2 cups earth balance or room temp butter<br />
1 lb powdered sugar<br />
1 Tb ginger powder<br />
1 tsp vanilla<br />
<br />
Cream earth balance or butter in a mixer on medium speed until creamy with no lumps. Add powdered sugar all at once with vanilla and ginger powder, cream on medium speed until thick and creamy. You may want to put in refrigerator until it sets up a bit if its too soft to spread. Frost the top of cake cut and serve. Refrigerate remaining cake as the frosting will become very soft if you don't. Enjoy!<br />

When the pan is hot add 1 Tb grape seed oil and add the garlic, sauté until
soften making sure to watch carefully being sure not to burn it. Add the
mushrooms and sauté 2 minutes. Add the wine and stir well, then add the
tomatoes. Bring sauce to a boil then simmer (at a low boil) for 30 minutes
while you prepare the rest of the dish. The last 10 minutes add the fresh basil
leaves to the sauce.</span></div>

best) on medium high till it’s pretty hot add just enough grape seed oil to
coat the pan toss in the peppers and quickly stir fry till they are chard on the edges (this is important for the finished dish in regards to texture and flavor. Remove the peppers
and set aside. Turn the heat down to medium.</span></div>

strips if using Quorn use them the way they are toss them with salt and pepper. Add 2 tsp. oil to the hot pan
and then toss in the Seitan or Quorn strips saute’ until heated through and
cooked, remove from pan and set aside.</span></div>

and add the slices of polenta, fry on each side until browned and crispy. Remove them to a paper plate of paper towel lined plate.</span></div>

on a plate, top with 2 slices of the cheese, next divide the Quorn or Seitan between the 4 plates piling them up into a mound, then do the same with the peppers. Lastly pour ¾ of
a cup of sauce over the top and sprinkle with parmesan cheese. Garnich with more
fresh basil leaves . Serve with crusty bread and your favorite wine.</span></div>

When I read news this week of yet another study about the negative
health effects of the pesticide chlorpyrifos on children, as a mother, I
got mad. As a New Hope Natural Media editor, I want to urge retailers
out there to step up efforts to educate shoppers about why organic
apples are the No. 1 organic buy to make for their family.<br />
The study found that prenatal exposure to the organophosphate (OP)
pesticide—now banned for residential use but still widely used on many
crops—may be linked with abnormal changes in the cortex of a child’s
developing brain. Other <a href="http://[http//www.panna.org/press-release/toxic-brain-chemical-must-be-banned-health-professionals-demand-epa-take-action%5D" target="_blank">recent studies</a>
show that exposure to chlorpyrifos in the womb and early childhood may
be linked with lowered IQ and increased incidence of ADHD.<br />
A few more persuasive facts:<br />

Apples are one of the top fruits consumed by U.S. children<br />
</li>
<li>
Conventional apples are <a href="http://newhope360.com/produce/dirty-dozen-apples-top-list-cilantros-unapproved-pesticides-make-record-debut">No. 1 on EWG’s Dirty Dozen</a>; 98 percent of apples tested had pesticides.<br />
</li>
<li>
Conventional applesauce, another kid favorite, retains much <a href="http://www.whatsonmyfood.org/food.jsp?food=AC" target="_blank">higher residues of several pesticides</a> on average than organic applesauce.<br />
</li>
<li>
Even officially allowable levels of OPs may harm humans, according to recent studies.<br />
</li>
<li>
Apples are also frequently sprayed with Paraquat, a pesticide that may have a link to Parkinson’s disease.<br />
</li>
<li>
The health of families in agricultural communities is directly
affected by either doing pesticide spraying, or by runoff or drift.</li>
</ul>
I won’t say it doesn’t pain me to spend as much as $2.99/lb on organic
Honeycrisps at certain times of year. But the pleasure of savoring their
clean, wholesome, juicy crunch without worrying about ingesting poisons
is truly priceless. (Plus, if I’m feeling thrifty, I can choose the

According to the Just Label It campaign, more than 900,000 people have
signed the petition to the FDA to label foods containing GMOs, and 92
percent of Americans support the labeling of genetically engineered
foods as well. But while the non-GMO movement is certainly heating up,
massive biotech companies such as <a href="http://newhope360.com/non-gmo/usda-give-speedy-approval-new-ge-crops">Dow Chemical and Monsanto have filed concerning petitions with the FDA</a> to deregulate their patented crops.<br />
Bill Freese, science policy analyst for the Center for Food Safety—the
nonprofit leading legal and scientific battles against GMOs—shares his
views with Organic Connections magazine.<br />
Dow is now seeking approval for a corn
seed resistant to the highly toxic herbicide 2,4-D. “It’s associated
with a number of diseases such as non-Hodgkin’s lymphoma, which is
cancer of the immune system,” says Freese. “2,4-D is also an endocrine
disrupter. [It’s] very volatile and it drifts a lot,” he explained.
“When you spray a herbicide it can drift hundreds of yards, and in some
cases even more, to land on a neighbor’s crops. In the end 2,4-D is

When you have a craving for something sweet but don't have anything in the house but the fixins try making these<br />
<br />
6 whole graham crackers (check your ingredient list if you want them to be vegan)<br />
4 oz. unsweetened chocolate or bittersweet<br />
2 Tb earth balance or real organic butter<br />
1/4 cup milk, soy milk, half-n-half what ever you have in the fridge<br />
20 drops of liquid stevia (if you have any of the NuNaturals flavored ones use 10 orange and 10 vanilla)<br />
1 Tb organic brown sugar or organic cane sugar <br />
Chopped nuts of your choice (almonds, hazelnuts, walnuts, pecans)<br />
Shredded Coconut<br />
Dried fruits like cranberries, raisins, blueberries<br />
<br /> Preparation:<br />

Place chocolate and earth balance in a double boiler or if you don't have one use a metal bowl on top of a pot with 1/4 pot of water. Place this on medium heat stir chocolate and butter until melted, turn off heat and add the cream stir until well blended.<br />
Place the grahams out onto a sheet of waxed paper or cookie sheet. spoon the warm chocolate sauce onto the top of the grahams 1 at a time. Then quickly sprinkle with your choice of toppings press them into the chocolate so they will stay put. Place in fridge for 15 minutes till set up, don't leave them too long or grahams get soft. Take out of fridge and endulge. <br />

They’re cheap, colorful, and preserve shelf life—it’s no wonder
artificial ingredients are now in most processed foods. Every year, U.S.
food manufacturers use 15 million pounds of synthetic dyes alone, even
as scientific evidence increasingly links some additives to health
issues such as allergies and certain cancers. “The body doesn’t
recognize these chemically produced ingredients as simple foods, so it
has to work harder, and that leads to irritation over time,” says Ashley
Koff, RD, coauthor of <em>Mom Energy</em> (Hay House, 2011).<br />

One way to avoid additives is to buy foods labeled USDA Organic. Here are the top questionable ingredients—and healthier natural choices.<br />
<h3>
<strong>Synthetic food dyes (Red 40, Yellow 5, Yellow 6, Blue 2)</strong></h3>
Synthesized from petroleum products,
artificial food colors are in cereals, baked goods, and even salad
dressings. Some clinical studies link them to hyperactivity in children.<br />
In 2009, Britain insisted food makers
take them out of foods marketed to kids. The U.K. version of Kraft
Macaroni & Cheese, for instance, is now free of artificial growth
hormones and colors.<br />
<strong>Better alternatives:</strong>
Vegetable (or no) coloring. Try mac and cheese that’s colored with
annatto, derived from achiote seed. Vegetable-colored jelly beans (look
in your bulk section, or try Surf Sweets) are better choices than, say,
fake-color Skittles. Instead of blue yogurt tubes, offer kids plain or
vanilla yogurt with granola, honey, or chocolate chips. And avoid
rainbow-hued sports drinks; try uncolored coconut water instead.<br />
<strong></strong><br />
<h3>
<strong>Artificial sweeteners</strong></h3>
Controversial synthetic sweeteners such
as aspartame (Equal Classic, NutraSweet), acesulfame K, and sucralose
(Splenda) don’t seem to work well for weight loss or diabetes
prevention, the health issues for which they’re commonly marketed. In a
recent study at the University of Texas Health Science Center at San
Antonio, drinking diet sodas increased waist circumference in humans; a
second study found aspartame raised blood sugar levels in diabetes-prone
rats.<br />
<strong>Better alternatives: </strong>The herbal extract stevia, or rebaudioside A, has a long history of
safe use in foods. The sugar alcohol erythritol serves as the base of
sweeteners like Swerve, which provides an easy 1:1 replacement for
sugar. Xylitol is another good option—especially in gums and mints
because it fights tooth decay—but it can upset tummies in large doses.<br />
<h3>
<strong>Genetically modified organism</strong>s</h3>
Introduced without labeling into the U.S. food system in the 1990s, <a href="http://newhope360.com/food-and-beverage/non-gmo">GMOs</a>
are now in the vast majority of packaged foods. (Governments in Europe,
Japan, and other countries mandated labels because of a lack of
research on long-term safety.) GMO-food consumption is now considered a
risk factor for allergies, autism, ADHD, and asthma, says Charles
Benbrook, PhD, chief scientist at the nonprofit Organic Center.<br />
If you see corn, soy, canola, cottonseed,
or sugar (made from beets, not cane) on an ingredients label—and the
product isn’t organic—you can assume it contains GMOs.<br />
<strong>Better alternatives:</strong>
Non-GMO Project verified and USDA Organic foods. Organic regulations
prohibit GMO ingredients. Also look for the Non-GMO Project seal which means the food has met thresholds mandated in Europe.<br />

veggies by cleaning and seeding the pepper then cut in half and place on a hot
George Forman Grill close the grill and cook until the pepper is soft and chard
around the edges. Remove the stem from the mushroom sprinkle with salt and
pepper and set aside to grill on George Forman, do the same with the onion
slice. </span></div>

bread or roll and spread both sides with garlic veganaise. Place the mushroom
on the bottom slice, then the onion and the pepper top with second slice of

One of which is stress! Stressing over the gifts, and is the house going to be ready for guests this year, "what do I serve at parties" and "What the Heck is all this going to cost me anyway"!<br />

I am not an expert on this but I might have a few ideas that could save you a little stress:<br />
<ul style="text-align: left;"><li>The first and foremost one is <i>Relax; </i>everything will work out fine and "why does everything have to be so perfect anyway"?? Stressing out only stresses those around you out and can sometimes ruin the holidays for all....</li>
<li>Next make a list of only the essential people that you have to buy for. Take all of those other people off your list. We are in a recession after all and this is not the time to focus on purchasing gifts for those that are not the most important people in our lives.</li>
<li>And try not to put more on your credit card than you can pay off in the first month of 2012.</li>
<li>This might make the last two easier: Focus this year on the meaning of Christmas and not the commercialism, gather a group and volunteer at a homeless shelter or food kitchen. Get kids involved in a food drive or gift drive. Make gifts this year and involve the whole family in making them. </li>
<li>When you <i>are</i> buying gifts keep in mind what the recipient might <u>really</u> need. Make your dollars count buy making your gifts usable items that someone will actually use. And I don't mean a tie for daddy covered in comic book characters!</li>
<li>What about those really hard to buy for people. Well food gifts are just the thing for them. Wrap up a bottle of sweet wine and order them a small chocolate dessert from (<b>www.everydaygourmetbakery.com</b>) and they will be happy campers for sure.</li>
<li>And if you have the money but don't need the stress of shopping in those busy malls bursting at the seams with craized parents looking for the latest and greatest toy for little Tommy then order all or most of your gifts on-line and have them gift wrapped and shipped directly to everyone on your list....</li>
</ul>Hope some of these ideas will be helpful. I try every year to be less stressed at the Hoilday's and one of the best ways I do it is to not fret over the gifts, the sales are better the day after anyway!!!!<br />

<div class="MsoNormal"></div><div class="MsoNormal"><span style="mso-spacerun: yes;"> </span>October marks the closing down of most of the farm markets across the country. If you are lucky enough to be in warmer climates you may enjoy them for a longer period and for that I am envious.<span style="mso-spacerun: yes;"> </span>Here in the north east we are bringing out the cauldrons and filling them with sweet and tart apples, cinnamon and brown sugar, boiling it all down to make apple sauce and apple butter.</div><div class="MsoNormal">Everywhere the fields are dotted with orange balls of varying sizes filled with sweet orange flesh that we turn into pumpkin pies for the holidays. Some really really large ones make it into the local contests for the largest pumpkin grown each year.<span style="mso-spacerun: yes;"> </span>Interesting to note is that the largest pumpkin ever grown weighed 1,140 pounds. I know some farmers around here that would love to beat that record. <span style="mso-spacerun: yes;"> </span>Recently I heard of people partaking in a recreation called “punkin chunkin”. Our ancestors would roll over in their graves if they knew about this wasteful activity. </div><div class="MsoNormal">As “Gus Portokalos” from “My Big Fat Greek Wedding” would say the name pumpkin originated from the Greek word for “large melon” which is “pepon”. (And they probably washed them with Windex)<span style="font-family: Wingdings; mso-ascii-font-family: Calibri; mso-ascii-theme-font: minor-latin; mso-char-type: symbol; mso-hansi-font-family: Calibri; mso-hansi-theme-font: minor-latin; mso-symbol-font-family: Wingdings;"><span style="mso-char-type: symbol; mso-symbol-font-family: Wingdings;">J</span></span>.<span style="mso-spacerun: yes;"> </span>The name pepon was eventually changed to pumpkin by the English colonists.</div><div class="MsoNormal">During Colonial times pumpkin was a staple in the Native Americans diet and when the white settlers came to America they saw how the Indians used pumpkin and it soon became a staple in their diets as well. There are many uses for pumpkin;<span style="mso-spacerun: yes;"> </span>unfortunately today we do not generally use pumpkin except for our traditional pumpkin pie.<span style="mso-spacerun: yes;"> </span>This is too bad because it is one of the most nutrient rich squashes containing natural vitamin A and potassium.<span style="mso-spacerun: yes;"> </span>An interesting fact about pumpkin is that in Colonial times it was an ingredient in the crust not the filling. </div><div class="MsoNormal">There are many traditional and nontraditional recipes for using pumpkin available today. One tweak on the traditional pumpkin pie that I like is to take your pie out after 15 minutes of baking then make a mixture of 2Tb organic flour, 4Tb organic cane sugar, 1tsp cinnamon, 2Tb earth balance. Blend this all together in a food processor or cut it in with a pastry blender. Then blend in 2/3 cup chopped pecans and 2/3 cup chopped walnuts.<span style="mso-spacerun: yes;"> </span>Sprinkle this over the top of the pie and place back into a 350’ oven for 35 minutes. </div><div class="MsoNormal">A more non-traditional but really delicious recipe that my whole family enjoys is for Leek and Pumpkin Casserole. It also uses seasonally available ingredients like cider and leeks. The recipe follows:</div><div class="MsoNormal"><b style="mso-bidi-font-weight: normal;">Leek and Pumpkin Casserole</b></div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">1 lg sweet onion, sliced</div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">2 leeks, sliced</div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">2 celery stalks, chopped</div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">2 carrots, thinly sliced</div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">1 red bell pepper, seeded and sliced</div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">1 3/4 cups diced pumpkin</div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">1 cup diced sweet potato</div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">2/3 cup diced rutabaga or turnips</div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">14 oz can of chopped tomatoes or 2 cups diced fresh tomatoes</div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">2/3 cup – 1 cup hard cider</div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">2 tsp herbs de Provence</div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">Salt and pepper to taste</div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">Fresh flat leaf parsley for garnish</div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;"><b style="mso-bidi-font-weight: normal;">Method</b></div><div class="MsoNormal">Preheat the oven to 350’F. Put all of the fresh vegetables into a casserole dish and mix them up well. Add the tomatoes, 2/3 cup of the cider, the herbs and salt and pepper mixing everything all up together.</div><div class="MsoNormal">Cover and bake in the center of the over for 1 ½ hours, stirring once or twice and adding a little more cider if needed. You want the vegetables to be tender when done. Garnish with parsley and serve warm with crusty bread.</div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;"><br />

Harvest time is a big deal in our area. Soon there will be apple festivals, with the many different flavors of cider being pressed in old wooden cider presses at local cider mills. Flavors such as raspberry, cherry and good old fashioned apple. The warm smell of cider doughnuts filling the air, wine tours winding down and wineries snuggling in for the long winter months ahead. Make sure to pick up some of your favorite local wine or cider to store away to be used in soul warming mulled wine and cider drinks throughout winter.</div><div class="MsoNormal">In New England the foliage is already nearing peak in many areas. And soon we will hear the laughter of small children running through the corn field mazes that will begin to crop up all around the north east and heartland. </div><div class="MsoNormal">Making good use of what we find at our local farmers market is probably at the top of many of your to do lists. Every week the colors of fall show themselves more and more and with them come the rich ambers, mustards and warm reds and green colors of winter vegetables. </div><div class="MsoNormal">With most area farmers markets soon coming to an end now is the time to prepare an area in your basement, garage or porch for storing those delicious beauties so that you can make them part of your winter meals on a regular basis. But once you’ve stored those beauties away don’t forget about them, it is easy for us to succumb to the old saying “out of site out of mind”. Make sure you have chosen your storage area wisely preferably one that you walk by or go near on a regular basis and be sure to check your stock regularly making sure to look for soft or moldy pieces that may need to be used first.</div><div class="MsoNormal">One of my family’s favorite winter squashes is acorn. I have several ways to prepare this delicately flavored beauty but the recipe below is my favorite.</div><div class="MsoNormal"><b style="mso-bidi-font-weight: normal;"><u>Coconut Scented Acorn Squash Puree</u></b></div><div class="MsoNormal">2 Acorn Squash cut in half and seeded</div><div class="MsoNormal">1 ½ cups organic coconut sugar</div><div class="MsoNormal">2 TB organic raw virgin coconut oil</div><div class="MsoNormal">1/8 tsp. sea salt</div><div class="MsoNormal">1 cup water</div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;"><b style="mso-bidi-font-weight: normal;">Method</b></div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;"><b style="mso-bidi-font-weight: normal;">Preheat the oven to 350’</b></div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;"><br />

Place all 4 halves in a large casserole dish with a lid and pour the water into the bottom of the dish. Divide the coconut sugar evenly between all four halves place the cover on top place in the oven and bake at 350’ for 1 hour.</div><div class="MsoNormal" style="margin-bottom: .0001pt; margin-bottom: 0in;">When the squash is done carefully (they will be very hot!) scrape down all of the meat into the center pool of melted sugar, do this for each half. Now scoop this mixture out and into a bowel. Add the coconut oil and salt, mash up and mix until the oil is melted. It seems everywhere you go in this country there is some regional food that is the big thing in that area. Everyone talks about it and if you are a visitor the locals tell you "Oh you gotta try that, you aint had nothin till you've had that". Its that way in Rochester and Buffalo as well here its red hots, white hots, grape pies and garbage plates. The original garbage plate was created by Nick Tahoe the owner of a food establishment by the same name. Nick is gone now but his establishment and many others still continue to make this concoction that is so loved by the locals.<br />

When my daughter and her boyfriend discovered it recently I knew I would have to come up with a version that was both delicious and acceptable to be consumed in our home. I'm not really a fan but I didn't want them to go elsewhere so this is what I came up with.<br />
<br />
First make a good version of Mac salad, using dream fields elbow macaroni, veganaise, mustard, relish, onion and red peppers. Season it well with salt and pepper and place in the fridge to get cold.<br />
Next put some Alexis brand french fries or home fries (can use sweet potato fries) in the oven. Follow the directions and bake them until crispy.<br />
Now make sloppy joe's with your favorite vegetarian grounds, and sauce. <br />
Ok when everything is done baking and cooking its time to assemble. It goes like this: Mac Salad, French Fries, then the Sloppy Joes. You top this all off with chopped onion, mustard and some hot sauce if you like.<br />
There are many versions of this throughout our area some add baked beans ( you can use Bush's vegetarian beans) and some versions use sausage or hot dogs (there are vegetarian versions of both of these) <br />
The important thing is to make it as disgusting as can be tolerated. For me hitting my 50th birthday has been very emotional. I guess I thought I would have accomplished more by now yet I have lived a very long life in just 50 years. Maybe its because I was starting to feel old. I don't really know for sure why I have dreaded this day so much but what I have done about it is whats important. I joined a local gym and started zumba classes, I also made a decision not to brood about it instead I would keep my positive attitude about life and do new things that brought me joy. I will make better choices and start doing things that make me happy. I love everyone that is in my life but I sometimes allow whats going on in their lives to effect mine and end up neglecting myself. No more! I will still be there for all of them but I will now be there for myself as well. I will now share my pain with my friends instead of keeping it bottled up inside, talking to no one about it and creating an ulcer for myself. I will invite more people to my get togethers thereby expanding my base of friends and I will continue to color my hair, damed if I'm gonna go grey! During our week with out the kids here while they were out in Oregon visiting my daughters father I talked my husband into joining me in my vegetarian diet. As I have mentioned in previous posts I am the only vegetarian in our house. So although I do serve alot of meatless meals my husband does still enjoy eating meat.<br />

He had been experiencing bloating and a constant felling of fullness. So I suggested we have a week of meatlessness to which he agreed. After just 3 days he began a full natural cleansing and by end of week was much more comfortable and his bloated feeling has gone away. Eli was born on Jan 4th and its been wonderful but hecteck ever since. My daughter has been trying to finish school and thank goodness she graduates in 2 weeks. But she starts college in the fall so its back to babysitting again, of course you know that me and grandpa don't really mind in fact grandpa would just die if he couldn't get his time with little Eli each day. I hate to be the steriotypical grand parents but we can't help it, he's such a joy and so cute.<br />
<br />
I am still working on my book, it seems like it's taking forever but one day I will finish it. Right now we are very busy at the bakery expanding out in California and in other places around the country.<br />
<br />
Now we are starting a new project at home. We want to start a sustainable community in the NC mountains where we can offer a peacefull living experience to humans and animals alike. It would include a mini farm, a year round green house, housing made of earth and cobb or strawbale, and possibly some Yurts, a plan for sales of products grown and produced on the farm as well as an Everyday Gourmet test kitchen and office. We are in the first stages of planning and will soon be looking at ideas for rasing the funds to go about building this community. Part of that plan will include student interns from the colleges and other outlets from surrounding areas. <br />

I will try to keep up with this blog more regularly now and post updates as we progress with our plan.<br />

Hope you all had a great holiday how ever you celebrate. We thought we were going to have a new little one over christmas weekend but it was a false alarm. Haley wants to have it tonight or I should say tomorrow morning on New Years day. She wants little Eli to be the first baby born so she can get all kinds of free stuff! My little girl has always wanted to be the first at just about everything and shes just a weeee bit spoiled but I don't think this time she is going to get her way. There have been no signs of a baby showing up today, just to be on the safe side tho we are all staying in tonight.<br />
<br />
Now to the new tradition: I needed a quick appetizer one night and I came up with fried artichokes with a cream sauce and artichoke bread patties. We make and eat alot of food around here durring the holidays, alot of it is fattening but all of it is better for you than the traditional stuff. This new recipe is no different its not low cal but its made with real ingredients and that is very important. Keep in mind this is a holiday or party appetizer not an everyday meal.<br />
<br />
And yes these are fried but not deep fried and remember I always use grapeseed oil or denatured coconut oil so it will be ok to fry these. I am not sure how they would work baked but if you try it let me know how they come out. And remember use as many organic ingredients as possible I always do; but sometimes we just can't so do the best you can and feel good about your effort.<br />
You will need:<br />
2 cans of artichokes (in brine, drained)<br />
1 1/2 c seasoned bread crumbs<br />
1/2 c grated pecorino romano cheese<br />
1/2tsp galic powder<br />
1/2 tsp black pepper<br />
1-2 eggs (or if you don't eat eggs, substitute 1/2 c milk or plain soymilk)<br />
1 TB water to add to the eggs (omit if not using eggs)<br />
About 1/2 inch of grapeseed oil in the bottom of a hot skillet<br />
Method:<br />
In a medium bowl whip the eggs with the water, set aside (or just pour the milk into the bowl). In low larger bowl mix the bread crumbs and cheese together add garlic powder and black pepper you can add more than what I have if you want, set this aside.<br />
Set the skillet onto burner and heat over medium heat add the oil. Cut the artichokes in half (top to bottom) and dip into the egg mixture first; then dredge in the breadcrumbs, place into hot skillet and fry on both sides until golden. Place on several layers of paper toweling to drain. Continue this until all have been fryed. Add the left over eggs to the remaining bread crumbs along with any pieces of artichoke that fell off durring dredging. Add some extra milk if you need to to make a thick batter. Form the batter into patties (or spoon into pan flattening to form a patty) and fry in left over oil. Set aside on paper towels to drain.<br />

For The Cream Sauce:<br />
In a small saucepan over medium/low heat melt 1/4 stick of butter or earth balance, add 1 1/2 cups of 1/2 and 1/2 or vitamin d milk. When milk starts to bubble add 3/4 cup grated pecorino romano cheese and stir until sauce thickens. The bakery is growing alot right now. We are now in California currently we have a small presence but we are about to have a much larger one. I think its because we have just introduced our bakers dozen value pack. It seems to be going over really well. Anyway this is all keeping me very busy which keeps me from updating my blog on a regular basis so please forgive me.<br />

I <em>did</em> want to tell you about this really great asian dish I made the other night. I used Quorn chicken strips and my family didin't even know. This is how I did it.<br />
<br />
<strong><u>Clean and slice into strips:</u></strong><br />
Broccoli<br />
Carrots (baby ones are sweet and tender)<br />
onions <br />
Mushrooms (slice like you normally would, if they are very wide cut in half)<br />
And any other vegetables you think would go good or you have in your fridge<br />
Wash a couple handfulls of fresh spinach (more if you like alot of greens)<br />
METHOD<br />
Heat a wok or skillet and add enough peanut, coconut or sesame oil to coat bottom of pan. Throw in the veggies all except mushrooms and spinach and some red pepper flakes and toss around in oil, sautee until just beginning to get tender. Add the Quorn chicken and mushrooms continue to sautee stirring occassionally. Season with <strong>garlic, ginger, curry powder and liquid aminos. Sprinkle with a little brown sugar or fructose.</strong> Cover and let simmer about 3-5 more minutes. Be carefull not to let veggies over cook stir in about a tablespoon or 2 of General Tso's bottled sauce if you want and then add the spinach last and toss with all of the juices. This is great without the General Tso's but it adds a sweet/tangyness and a little more juice to spoon over rice.<br />
The great thing about this is, like all of my recipe suggestions; <em>it's just that</em> a suggestion ment to teach you how to put flavors together so that you can use what you learn from one recipe and make adjustments to turn it into your own. For instance this recipe can be made your own by using as much of the spices as you like. If you like garlic use more if you don't like ginger go light on that. Also if you use denatured coconut oil it will be tasteless but if you don't it will give it a nice coconut flavor and how kool to add some unsweetened coconut flakes to this. Or serve over coconut rice. <br />
Another idea would be to substitute another green or seaweed for the spinach adjusting the seasoning to match the flavor of the green for instance omitting the sugar.<br />
Enjoy over your favorite rice or try over quinoa for added protein.<br />

Having teenagers around that I have to feed makes it even harder to be creative all of the time. <br />
My daughter Haley loves Subway; which I hate and can't understand; but what do they say," if you can't fight um Beat um! "LOL :). So I came up with a recipe for her favorite sub (Chicken bacon ranch) that we can do at home. Heres what I do:<br />
Cut a chicken breast into stripes, (You can also use your favorite fake chicken thats what I do and I love it) season with garlic, salt and pepper then fry out in a little olive or grapeseed oil set aside. Slice a sweet onion into thin slices and saute till golden in the same pan. Open a sub roll preferably wheat and on 1 side squirt some ranch dressing, use mustard of your choice on the other Haley likes honey mustard. Then Put some chicken and onions on 1 side of the bun and top with provolone slices or other cheese of your choice. Place on a cookie sheet and put under the broiler until cheese is melted and bubbly. Remove and finish with what ever toppings you want, (my daughter likes fresh spinach, tomatoes, sliced banana peppers, and cucumbers. She also likes bacon on it so I either use Bac'Uns or real bacon bits (not that I like to use them but I don't buy bacon so its a way for her to have the taste without using too much of it). <br />
<br />
You can also do a similar thing with Kentucky fried chickens mashed potato bowl which she loves and used to sneak sometimes until I started making it for her. Use the same principle as above except you can buy vegetarian tenders (Quorn makes a good one) or Barberas makes a natural raw one that you have to bake first. Then make mashed potates and gravy and cook some sweet corn with chopped onions. Put it all together in a bowl and top it off with shredded cheese.<br />
<br />
Another one is McDonalds new breakfast sandwich made with the sweet maple flavored muffin. At home we make small pancakes and use them for the bread and then drizzle maple syrup on the fake sausage and egg. Its yummy.<br />
Use these ideas and see what else you can come up with on your own. I am a vegetarian and I use dairy products in some of my personal dishes so I use cows milk cream cheese. You can substitute tofuti cream cheese if you want.<br />

Heres the basiscs of the dish:<br />
Take jalepenos as many as you want I used 6 and slice in half horizontaly, seed and rinse well. (be careful your fingers will have hot oils on them)<br />
Mix about 6 oz of cream cheese with chopped garlic, cumin powder, chipotle powder and chopped scallions or chives. Put this mixture into a plastic bag or frosting bag and cut off the tip end. Fill each half of pepper by pipping mixture into it. Place the peppers into a baking dish and set aside.<br />
<br />
In a food processor or blender process 1 large or 2 medium fresh tomatoes (cut up) along with some sea salt, garlic, and cumin. Pour over peppers and place into a 350' oven, bake 30 minutes. Serve hot with rice. DELICIOUS!<br />
Don't be affraid to experiment with other flavors in the cream cheese mixture. Also try other types of peppers<br />

I cannot believe what they serve to the patients and I really can't believe they call some of it food! <br />

My husband is in the hospital right now, something he has to do every 2-3 years or so. He is a heart patient and a borderline diabetic. He is also disabled due to a severe back injury and permanent nerve damage. I have kept his diabeties under control with diet and he eats a heart healthy diet at home. At the hospital last night they tried to feed him a dinner of bbq pork, mashed potatoes and corn.....when he asked the nurse if this was the correct plate for him she responded "yes sir this is a heart healthy meal, they do this scientificly sir". He refused to eat it telling her that his wife would kill him if he did and opted for a tuna sandwich which the nurse produced from the nurses refrigerator. I was proud of him but also appauld at the hospital! How dare they give greasy pork to a heart patient and 2 starchy carbs to a diabetic whats wrong with this picture?<br />

Well thats how I have been feeling lately about my husbands and my dream of becoming part of or starting our own eco-village. I puruse those eco village websites hoping to find just the right place for us to retire. Only to find that the expense of joining such a place is so high that I cannot ever see us affording it. I really only want to have a piece of land that is big enough to provide space for about 4-5 familys and allow for farming area to feed all of us. I want to create a community spirit that encourages love for one another as well as respect for each others personal space. With communal spaces and private dwellings. I am hoping that with enough involvement we can all share in the work as well as expences so that we can all benefit sharing in the bounty as well. One is a new yeast that actually produces Vitamin D as it proofs. I have already been using that for about a month now. The other 2 are an organic dough conditioner that helps the bread be more consitent with texture and a whole wheat white flour that hasn't been bleached or over processed and still retains the whole grain fiber from the wheat. I just started using them and must say I love them both. <br />
Next I will be adding DHA (omega 3) the brain food. I am using one derived from algae so its vegan and there are no worries of it containing mercury.<br />
